Ingredients

  • 2 boneless, skinless chicken breasts (about 1 pound total)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)
  • Fresh basil leaves for garnish

Instructions

  1. Season the chicken breasts with salt and black pepper on both sides.
  2. In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for about 5-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.
  4. Add the cherry tomatoes to the skillet and cook for 2-3 minutes until they start to soften.
  5. Pour in the heavy cream, then stir in the Parmesan cheese, Italian seasoning, and red pepper flakes (if using). Mix well and let it simmer for 3-4 minutes until the sauce thickens slightly.
  6. Return the chicken to the skillet, spooning the sauce over the top. Cook for an additional 2-3 minutes to heat through.
  7. Garnish with fresh basil leaves before serving.
