Description

Rich, creamy, and loaded with tender chicken, fluffy gnocchi, and fresh vegetables, Chicken and Gnocchi Soup is the ultimate comfort food. Perfect for chilly days, family dinners, or meal prep, this recipe is hearty, wholesome, and irresistibly delicious.

Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 3 celery stalks, diced
  • 3 garlic cloves, minced
  • 2 carrots, shredded
  • 1 pound cooked chicken breast, cubed
  • 4 cups chicken broth
  • 16 oz mini potato gnocchi
  • 6 oz baby spinach leaves
  • 1 tablespoon cornstarch (optional)
  • 2 tablespoons cold water (optional)
  • 2 cups half-and-half cream
  • Salt, to taste
  • Ground black pepper, to taste

Instructions

  1. Prepare Ingredients: Dice the onion and celery, mince the garlic, shred the carrots, and cube the cooked chicken.
  2. Cook Vegetables: Heat olive oil in a large pot over medium heat. Add the onion, celery, carrots, and garlic. Sauté for about 5 minutes, until the onion is translucent and fragrant.
  3. Add Chicken and Broth: Stir in the cooked chicken and chicken broth. Bring the mixture to a gentle simmer.
  4. Cook Gnocchi: Add the gnocchi to the pot and let it cook for 3–4 minutes, or until the gnocchi floats to the top.
  5. Add Spinach: Stir in the baby spinach leaves and cook for 2–3 minutes, until the spinach wilts.
  6. Thicken the Soup (Optional): For a thicker soup, whisk cornstarch with cold water until smooth. Stir the mixture into the soup and cook until slightly thickened.
  7. Add Cream: Pour in the half-and-half cream and stir gently. Cook for an additional 5 minutes to warm through.
  8. Season and Serve: Taste the soup and season with salt and black pepper to your preference. Ladle into bowls and serve hot.

Notes

  • Make It Dairy-Free: Substitute the half-and-half with coconut milk or a plant-based cream.
  • Use Rotisserie Chicken: Save time by using shredded rotisserie chicken.
  • Storage: Refrigerate leftovers in an airtight container for up to 3 days. Reheat gently to avoid curdling.
  • Freeze Friendly: Freeze the soup without the cream. Add the cream after reheating for the best texture.
