Description
There are certain snacks that instantly bring a smile to your face, and for me, Marshmallow Caramel Popcorn is one of them. It’s the kind of treat that feels like pure magic, a perfect combination of sweet, buttery, and chewy textures that make every bite unforgettable. Unlike traditional caramel popcorn that hardens into a crunchy texture, this version stays soft and gooey, thanks to the melted marshmallows that create an almost toffee-like coating. Perfect for movie nights, holiday gatherings, or as a homemade gift, this popcorn is impossible to resist!
Ingredients
For the Popcorn Base:
- 12 cups popped popcorn (air-popped or plain microwave popcorn)
For the Marshmallow Caramel Coating:
- 1 cup brown sugar
- 1/2 cup unsalted butter, cut into pieces
- 2 tablespoons light corn syrup
- 3 cups mini marshmallows
- 1 teaspoon vanilla extract
Instructions
- Prepare the Popcorn: Place the popcorn in a large mixing bowl, making sure to remove any unpopped kernels.
- Make the Caramel Sauce: In a saucepan over medium heat, melt the butter with brown sugar and corn syrup, stirring constantly.
- Melt the Marshmallows: Add the mini marshmallows and continue stirring until they are fully melted and incorporated into the caramel.
- Add the Vanilla: Remove from heat and stir in vanilla extract for extra flavor.
- Coat the Popcorn: Pour the warm caramel marshmallow mixture over the popcorn, tossing gently to coat every piece.
- Let It Set & Serve: Allow the popcorn to cool slightly before serving. Enjoy warm and gooey or let it firm up for a chewier texture.
Notes
- Use Freshly Popped Popcorn: Air-popped or stovetop popcorn works best. If using microwave popcorn, ensure it’s plain and unsalted.
- Remove Any Unpopped Kernels: Before coating, sift through the popcorn to avoid any hard surprises.
- Work Quickly When Coating: Stir immediately after pouring the caramel mixture to coat every piece before it thickens.
- Let It Cool Slightly Before Eating: This allows the coating to set just enough to be gooey but not overly sticky.
- Enhance the Flavor: Add a pinch of sea salt for a sweet-salty balance.
