A delicious Mediterranean twist on a classic grilled cheese sandwich, featuring spinach, sun-dried tomatoes, and a blend of cheeses.
Ingredients
- 2 slices of whole grain bread
- 2 ounces fresh spinach, chopped
- 2 ounces cream cheese, softened
- 1 ounce feta cheese, crumbled
- 2 tablespoons sun-dried tomatoes, chopped
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 2 slices of mozzarella cheese
Instructions
- Heat a skillet over medium heat and add the olive oil.
- In a bowl, mix the chopped spinach, cream cheese, feta cheese, sun-dried tomatoes, garlic powder, salt, and pepper until well combined.
- Spread the spinach mixture evenly onto one slice of bread.
- Top with mozzarella cheese and place the second slice of bread on top.
- Place the sandwich in the heated skillet and grill for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.
- Remove from the skillet and let it cool for a minute before slicing in half.
Notes
- For a crispier sandwich, use a panini press instead of a skillet.
- You can also add sliced olives or roasted red peppers for extra flavor.
- For a lighter version, use low-fat cream cheese and reduced-fat mozzarella.
