Ingredients

  • 6 large eggs
  • 1 (12 oz) can evaporated milk
  • 1 (14 oz) can condensed milk

  • Hot water (for the water bath)

Instructions

  • Preheat Oven and Prepare Equipment:
    Preheat your oven to 350°F (175°C). Use a 9-inch pie dish or similar-sized baking dish that fits inside a larger roasting pan.
  • Make the Caramel:
    In a small saucepan over medium heat, add the sugar and stir constantly until it melts and turns a golden brown.
    Immediately pour the caramel into the pie dish, swirling to coat the bottom evenly. Set aside to cool.
  • Prepare the Flan Mixture:
    In a blender, combine the eggs, evaporated milk, condensed milk, and vanilla extract. Blend for 2 minutes or until smooth.
  • Strain the Mixture:
    Pour the blended flan mixture through a sieve into the caramel-coated dish to ensure a silky texture.
  • Set Up the Water Bath:
    Place the pie dish into a roasting pan. Fill the roasting pan with hot water until it reaches halfway up the sides of the pie dish.
  • Bake the Flan:
    Carefully transfer the roasting pan to the oven. Bake for 40–50 minutes, or until a toothpick inserted into the center comes out clean.
  • Cool and Refrigerate:
    Remove the flan from the water bath and let it cool to room temperature. Cover and refrigerate for at least 4 hours, or overnight.
  • Unmold and Serve:
    Run a knife around the edges of the flan to loosen it. Place a large plate over the dish and quickly flip it to release the flan. The caramel will flow over the top. Slice and serve.
