Ingredients
- 4 ears of fresh corn, husked
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- 1/2 teaspoon lime zest
- 1 tablespoon lime juice
- 1/2 cup crumbled cotija cheese
- 1/4 cup chopped fresh cilantro
- Salt and pepper to taste
- Lime wedges for serving
Instructions
- Preheat your grill to medium-high heat.
- Grill the corn for about 10-15 minutes, turning occasionally, until the kernels are tender and slightly charred. Remove from the grill and let cool slightly.
- In a mixing bowl, combine the mayonnaise, sour cream, chili powder, garlic powder, lime zest, lime juice, salt, and pepper. Mix until smooth and well combined.
- Once the corn is cool enough to handle, brush the mayonnaise mixture generously over each ear of corn.
- Sprinkle the crumbled cotija cheese over the coated corn, pressing gently to help it adhere.
- Garnish with chopped cilantro and serve with lime wedges on the side.
Notes
- For a spicier version, add a dash of hot sauce to the mayonnaise mixture.
- Try using grilled corn on the cob as a salad topping by cutting the kernels off the cob and mixing them with the dressing and cheese for a delicious side dish.
