Ingredients

  • 2 lbs boneless, skinless chicken thighs or breasts
  • 5 tbsp salted butter
  • 3 tbsp white miso
  • 1 tbsp honey
  • 1 green onion, chopped
  • 3 tbsp olive oil or avocado oil
  • Salt and pepper to taste
  • Optional: toasted sesame seeds for garnish

Instructions

  1. Make the Miso Butter Sauce – In a microwave-safe bowl, soften the butter. Stir in miso, honey, and chopped green onion. Mix well and set aside.
  2. Cook the Chicken – Heat a large pan over medium-high heat. Add olive oil and place the chicken in the pan. Season with salt and pepper. Cook for 8 minutes per side, adjusting heat as needed to prevent burning.
  3. Coat with Miso Butter – Add the miso butter mixture to the pan, letting it melt and coat the chicken. Cook for 1-2 more minutes, flipping occasionally, until the chicken reaches an internal temperature of 165°F.
  4. Rest & Serve – Remove from heat and let the chicken rest for 5 minutes before slicing. Serve over rice or salad and garnish with toasted sesame seeds.

  • Boneless thighs work best for juicy results, but you can use chicken breast if preferred.
