Ingredients
- 2 ripe bananas, mashed
- 1/3 cup melted butter
- 1 teaspoon baking soda
- Pinch of salt
- 3/4 cup sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 cup fresh or frozen blueberries
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a large mixing bowl, combine the mashed bananas and melted butter.
- Stir in the baking soda and salt.
- Add the sugar, beaten egg, and vanilla extract, mixing until well combined.
- Gradually fold in the flour until just incorporated.
- Gently fold in the blueberries, being careful not to overmix.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Notes
- For a richer flavor, try adding 1/2 teaspoon of cinnamon to the batter.
- You can substitute half of the all-purpose flour with whole wheat flour for added nutrition.
