This One-Pan Balsamic Chicken is an easy, flavorful, and nutrient-rich dish that brings together juicy seared chicken, a tangy balsamic glaze, melted mozzarella, and sweet grape tomatoes. Perfect for busy weeknights or elegant dinners, this one-pan wonder is both simple to make and incredibly satisfying.
Ingredients
For the Balsamic Glaze:
- ⅓ cup balsamic vinegar
- 2 tbsp honey
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1 tsp Italian seasoning
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tbsp Dijon mustard
For the Chicken & Toppings:
- 2 lbs boneless, skinless chicken breasts, pounded evenly
- 2 tbsp vegetable oil
- 8 oz fresh mozzarella, torn into pieces
- 2 cups grape tomatoes, halved
- 2 tbsp fresh basil, chopped
- Salt & black pepper, to taste
Instructions
- Prepare the Balsamic Marinade
- In a small bowl, whisk together balsamic vinegar, honey, olive oil, garlic, Italian seasoning, onion powder, garlic powder, and Dijon mustard.
- Mix the Mozzarella Topping
- In a separate bowl, combine mozzarella, halved grape tomatoes, and fresh basil.
- Season with salt & black pepper, then set aside.
- Sear the Chicken
- Heat a large, oven-safe skillet over medium-high heat and add vegetable oil.
- Season chicken breasts with salt & black pepper, then sear for 2-3 minutes per side until golden brown.
- Coat with Balsamic Glaze & Bake
- Pour the balsamic marinade over the chicken and let it simmer for a minute, scraping up any browned bits.
- Top with the mozzarella-tomato mixture and transfer the skillet to a preheated 400°F oven.
- Bake uncovered for 18-23 minutes, or until the chicken is fully cooked.
- Rest, Serve & Enjoy!
- Let the chicken rest for 3-5 minutes, then serve warm.

- Use aged balsamic vinegar for a naturally sweet & rich glaze.
- For even cooking, pound the chicken to an even thickness.
