Description
A flavorful and easy-to-make one-pan dish featuring Cajun chicken, sausage, and rice, perfect for a hearty meal.
Ingredients
- 2 tablespoons olive oil
 - 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
 - 8 ounces smoked sausage, sliced
 - 1 medium onion, diced
 - 1 red bell pepper, diced
 - 2 cloves garlic, minced
 - 1 cup long-grain white rice
 - 1 can (14.5 ounces) diced tomatoes, undrained
 - 2 cups chicken broth
 - 2 teaspoons Cajun seasoning
 - 1 teaspoon dried thyme
 - Salt and pepper to taste
 - 2 green onions, sliced (for garnish)
 - Fresh parsley, chopped (for garnish)
 
Instructions
- In a large skillet or sauté pan, heat the olive oil over medium-high heat. Add the chicken pieces and cook until browned, about 5-7 minutes. Remove the chicken from the pan and set aside.
 - In the same pan, add the sliced sausage and cook for another 3-4 minutes until browned.
 - Add the diced onion and red bell pepper to the pan, cooking until softened, about 3-5 minutes. Stir in the minced garlic and cook for an additional minute.
 - Return the chicken to the pan and add the rice, diced tomatoes (with juice), chicken broth, Cajun seasoning, dried thyme, salt, and pepper. Stir well to combine.
 - Bring the mixture to a boil, then reduce the heat to low. Cover the pan and simmer for 20-25 minutes, or until the rice is cooked and has absorbed the liquid.
 - Remove from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork before serving. Garnish with sliced green onions and chopped parsley.
 
Notes
- For added heat, include a diced jalapeño or a pinch of cayenne pepper.
 - Substitute the chicken thighs with shrimp for a seafood twist, adjusting the cooking time accordingly to avoid overcooking the shrimp.
