Description

A flavorful and easy-to-make one-pan dish featuring Cajun chicken, sausage, and rice, perfect for a hearty meal.


Ingredients

  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
  • 8 ounces smoked sausage, sliced
  • 1 medium onion, diced
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 cup long-grain white rice
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 2 cups chicken broth
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 green onions, sliced (for garnish)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet or sauté pan, heat the olive oil over medium-high heat. Add the chicken pieces and cook until browned, about 5-7 minutes. Remove the chicken from the pan and set aside.
  2. In the same pan, add the sliced sausage and cook for another 3-4 minutes until browned.
  3. Add the diced onion and red bell pepper to the pan, cooking until softened, about 3-5 minutes. Stir in the minced garlic and cook for an additional minute.
  4. Return the chicken to the pan and add the rice, diced tomatoes (with juice), chicken broth, Cajun seasoning, dried thyme, salt, and pepper. Stir well to combine.
  5. Bring the mixture to a boil, then reduce the heat to low. Cover the pan and simmer for 20-25 minutes, or until the rice is cooked and has absorbed the liquid.
  6. Remove from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork before serving. Garnish with sliced green onions and chopped parsley.

Notes

  • For added heat, include a diced jalapeño or a pinch of cayenne pepper.
  • Substitute the chicken thighs with shrimp for a seafood twist, adjusting the cooking time accordingly to avoid overcooking the shrimp.
