Description
A quick and delightful one-pot dish featuring spinach and tomatoes with penne pasta.
Ingredients
- 8 ounces penne pasta
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1 can (14.5 ounces) diced tomatoes, undrained
- 4 cups vegetable broth
- 4 cups fresh spinach
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1/2 cup grated Parmesan cheese
- Fresh basil leaves for garnish (optional)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
- Add the diced tomatoes (with their juices), vegetable broth, penne pasta, Italian seasoning, salt, and pepper. Stir to combine.
- Bring the mixture to a boil, then reduce the heat to a simmer. Cover and cook for about 10-12 minutes, stirring occasionally, until the pasta is al dente and most of the liquid is absorbed.
- Stir in the fresh spinach and cook for an additional 2-3 minutes until the spinach is wilted.
- Remove from heat and stir in the grated Parmesan cheese until melted and creamy.
- Serve immediately, garnished with fresh basil leaves if desired.
Notes
- For a protein boost, add cooked chicken or shrimp during the last few minutes of cooking.
- To make it a bit spicier, add a pinch of red pepper flakes when sautéing the garlic.
