Description

A quick and delightful one-pot dish featuring spinach and tomatoes with penne pasta.


Ingredients

  • 8 ounces penne pasta
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 4 cups vegetable broth
  • 4 cups fresh spinach
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese
  • Fresh basil leaves for garnish (optional)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  2. Add the diced tomatoes (with their juices), vegetable broth, penne pasta, Italian seasoning, salt, and pepper. Stir to combine.
  3. Bring the mixture to a boil, then reduce the heat to a simmer. Cover and cook for about 10-12 minutes, stirring occasionally, until the pasta is al dente and most of the liquid is absorbed.
  4. Stir in the fresh spinach and cook for an additional 2-3 minutes until the spinach is wilted.
  5. Remove from heat and stir in the grated Parmesan cheese until melted and creamy.
  6. Serve immediately, garnished with fresh basil leaves if desired.

Notes

  • For a protein boost, add cooked chicken or shrimp during the last few minutes of cooking.
  • To make it a bit spicier, add a pinch of red pepper flakes when sautéing the garlic.
