Ingredients

For the Oreo Crust:

  • 1 1/2 cups Oreo cookie crumbs
  • 4 tbsp melted butter

For the Mint Cheesecake Filling:

  • 16 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 1/2 cup sour cream
  • 2 large eggs, room temperature
  • 1 tsp mint extract
  • Green food coloring (optional)

For the Whipped Cream Topping:

  • 1 cup heavy cream
  • 2 tbsp powdered sugar

Instructions

  1. Prepare the Oreo Crust
    • Preheat the oven to 325°F (163°C) and line an 8×8-inch baking pan with parchment paper.
    • Mix Oreo crumbs with melted butter and press into the pan.
    • Bake for 10 minutes, then let cool.
  2. Make the Cheesecake Filling
    • Beat softened cream cheese until fluffy.
    • Gradually add sugar, sour cream, and eggs, mixing until smooth.
    • Stir in mint extract and green food coloring (if using).
  3. Bake the Cheesecake Bars
    • Pour cheesecake mixture over the cooled crust.
    • Bake for 40-45 minutes until the center is slightly jiggly but the edges are set.
    • Let bars cool at room temperature, then refrigerate overnight.
  4. Prepare the Whipped Cream
    • Beat heavy cream and powdered sugar together until stiff peaks form.
    • Chill until ready to use.
  5. Slice and Serve
    • Lift the cheesecake out using the parchment paper and cut into bars.
    • Top with whipped cream before serving.

Notes

  • Full-fat cream cheese ensures the best creamy texture.
  • Crushing Oreos finely helps the crust hold together well.
  • Allowing the cheesecake to cool gradually prevents cracks.
  • Chill overnight for the best flavor and texture.
  • Store in an airtight container in the fridge for up to 5 days or freeze for up to 3 months.
