Ingredients
For the Oreo Crust:
- 1 1/2 cups Oreo cookie crumbs
- 4 tbsp melted butter
For the Mint Cheesecake Filling:
- 16 oz cream cheese, softened
- 3/4 cup granulated sugar
- 1/2 cup sour cream
- 2 large eggs, room temperature
- 1 tsp mint extract
- Green food coloring (optional)
For the Whipped Cream Topping:
- 1 cup heavy cream
- 2 tbsp powdered sugar
Instructions
- Prepare the Oreo Crust
- Preheat the oven to 325°F (163°C) and line an 8×8-inch baking pan with parchment paper.
- Mix Oreo crumbs with melted butter and press into the pan.
- Bake for 10 minutes, then let cool.
- Make the Cheesecake Filling
- Beat softened cream cheese until fluffy.
- Gradually add sugar, sour cream, and eggs, mixing until smooth.
- Stir in mint extract and green food coloring (if using).
- Bake the Cheesecake Bars
- Pour cheesecake mixture over the cooled crust.
- Bake for 40-45 minutes until the center is slightly jiggly but the edges are set.
- Let bars cool at room temperature, then refrigerate overnight.
- Prepare the Whipped Cream
- Beat heavy cream and powdered sugar together until stiff peaks form.
- Chill until ready to use.
- Slice and Serve
- Lift the cheesecake out using the parchment paper and cut into bars.
- Top with whipped cream before serving.
