A delicious and healthy Paleo Grilled Chicken Cobb Salad packed with fresh ingredients and flavors.
Ingredients
- 2 boneless, skinless chicken breasts (about 1 pound)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- 6 cups mixed salad greens (such as romaine, spinach, and arugula)
- 1 cup cherry tomatoes, halved
- 1 avocado, diced
- 4 strips of cooked bacon, crumbled
- 1/2 cup cucumber, diced
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup balsamic vinegar
Instructions
- Preheat the grill to medium-high heat. In a small bowl, mix together garlic powder, onion powder, smoked paprika, salt, and pepper. Rub the spice mixture over the chicken breasts, then drizzle with olive oil.
- Grill the chicken for 6-7 minutes on each side or until the internal temperature reaches 165°F. Remove from the grill and let rest for 5 minutes before slicing.
- In a large salad bowl, combine the mixed greens, cherry tomatoes, avocado, crumbled bacon, cucumber, red onion, and parsley.
- Slice the grilled chicken and place it on top of the salad. Drizzle with balsamic vinegar just before serving. Toss gently to combine.
- Serve immediately and enjoy your fresh and healthy salad!
Notes
- For added flavor, marinate the chicken in olive oil, lemon juice, and herbs for 30 minutes before grilling.
- To make it dairy-free, omit any cheese and ensure the bacon is sugar-free. You can also add hard-boiled eggs for extra protein.
