Description
A refreshing and delicious Pesto Tortellini Pasta Salad perfect for any occasion.
Ingredients
- 8 ounces cheese tortellini
- 1 cup halved cherry tomatoes
- 1 cup chopped fresh spinach
- 1/2 cup halved mozzarella balls
- 1/4 cup grated Parmesan cheese
- 1/2 cup basil pesto
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1/4 cup toasted pine nuts (optional)
Instructions
- Boil a pot of water and cook the cheese tortellini according to the package instructions.
- Once cooked, drain the tortellini and rinse it under cold water to stop the cooking process.
- In a large bowl, combine the cooled tortellini with halved cherry tomatoes, chopped spinach, mozzarella balls, and grated Parmesan cheese.
- In a separate small bowl, mix together the basil pesto, olive oil, and a pinch of salt and pepper until well blended.
- Drizzle the dressing over the tortellini mixture and toss gently to ensure even coating.
- If using, sprinkle the toasted pine nuts on top for extra crunch.
- Allow the salad to chill in the refrigerator for at least half an hour before serving.
- Enjoy the dish cold or at room temperature.
Notes
- For a protein boost, add in grilled chicken or chickpeas.
- Swap out cherry tomatoes for diced bell peppers or cucumbers to change up the flavor and texture.
