Description

A refreshing and delicious Pesto Tortellini Pasta Salad perfect for any occasion.


Ingredients

  • 8 ounces cheese tortellini
  • 1 cup halved cherry tomatoes
  • 1 cup chopped fresh spinach
  • 1/2 cup halved mozzarella balls
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup basil pesto
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/4 cup toasted pine nuts (optional)

Instructions

  1. Boil a pot of water and cook the cheese tortellini according to the package instructions.
  2. Once cooked, drain the tortellini and rinse it under cold water to stop the cooking process.
  3. In a large bowl, combine the cooled tortellini with halved cherry tomatoes, chopped spinach, mozzarella balls, and grated Parmesan cheese.
  4. In a separate small bowl, mix together the basil pesto, olive oil, and a pinch of salt and pepper until well blended.
  5. Drizzle the dressing over the tortellini mixture and toss gently to ensure even coating.
  6. If using, sprinkle the toasted pine nuts on top for extra crunch.
  7. Allow the salad to chill in the refrigerator for at least half an hour before serving.
  8. Enjoy the dish cold or at room temperature.

Notes

  • For a protein boost, add in grilled chicken or chickpeas.
  • Swap out cherry tomatoes for diced bell peppers or cucumbers to change up the flavor and texture.
