For the Chicken & Rice:

  • 1 pound chicken breast, cubed

  • 1 cup pineapple, cubed
  • 1 cup jasmine rice
  • 2 cups chicken broth
  • 1 tablespoon soy sauce (or tamari for gluten-free)
  • 1 teaspoon ginger, grated
  • Salt and black pepper, to taste

For Garnish:

  • ¼ cup green onions, sliced
  • 1 tablespoon sesame seeds

Instructions

1. Sear the Chicken
Heat olive oil in a large skillet over medium heat. Add the cubed chicken and cook for 4-5 minutes until golden brown. Remove from the skillet and set aside.

2. Sauté the Aromatics
In the same skillet, add chopped onion, garlic, and diced bell pepper. Sauté for 3-4 minutes until softened.

3. Caramelize the Pineapple
Add the pineapple cubes and cook for 2 minutes, allowing the natural sugars to caramelize slightly.

4. Cook the Rice
Stir in jasmine rice, chicken broth, soy sauce, grated ginger, salt, and pepper. Bring to a boil, then reduce heat to low. Cover and simmer for 18-20 minutes until the rice is tender and the liquid is absorbed.
