Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup shelled pistachios, finely chopped
  • 1 cup cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon almond extract
  • 1/2 cup heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Fold in the chopped pistachios.
  7. Spread the batter evenly in the prepared baking pan and bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow to cool completely in the pan on a wire rack.
  9. In another bowl, beat the cream cheese and powdered sugar until smooth, then add the almond extract and mix until combined.
  10. In a separate bowl, whip the heavy cream until stiff peaks form, then gently fold it into the cream cheese mixture.
  11. Once the bars are completely cooled, spread the cream cheese mixture evenly over the top.
  12. Refrigerate for at least 2 hours to set before cutting into squares.
