  • 115g unsalted butter, melted and cooled
  • 100g brown sugar
  • 50g granulated sugar
  • 1 large egg (room temperature)
  • 1 tsp vanilla extract

Mix-ins and Toppings:

  • 100g semi-sweet or dark chocolate, roughly chopped
  • 50g unsalted pistachios, shelled and roughly chopped
  • Flaky salt (for sprinkling)

Instructions

  • Freeze Pistachio Cream:
    • Line a plate with parchment paper.
    • Spread the pistachio cream into a thick sheet or scoop small dollops.
    • Freeze for at least 1 hour or overnight.
  • Prepare Dry Ingredients:
    • In a bowl, whisk together flour, cornstarch, baking powder, baking soda, and salt. Set aside.
  • Mix Wet Ingredients:
    • In a large bowl, whisk melted butter, brown sugar, and granulated sugar until combined.
    • Add egg and vanilla extract, whisking until smooth.
  • Combine Ingredients:
    • Gradually fold the dry mixture into the wet mixture. Mix until just combined.
  • Incorporate Mix-ins:
    • Fold in chopped chocolate and pistachios.
  • Chill Dough:
    • Scoop 4-tbsp portions of dough, forming balls.
    • Place on a parchment-lined plate and chill for 1 hour.
  • Stuff and Shape:
    • Preheat oven to 350°F (175°C).
