Ingredients
Cookie Dough:
- 150g pistachio cream spread
- 180g all-purpose flour
- 1 tbsp cornstarch
- ½ tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 115g unsalted butter, melted and cooled
- 100g brown sugar
- 50g granulated sugar
- 1 large egg (room temperature)
- 1 tsp vanilla extract
Mix-ins and Toppings:
- 100g semi-sweet or dark chocolate, roughly chopped
- 50g unsalted pistachios, shelled and roughly chopped
- Flaky salt (for sprinkling)
Instructions
- Freeze Pistachio Cream:
- Line a plate with parchment paper.
- Spread the pistachio cream into a thick sheet or scoop small dollops.
- Freeze for at least 1 hour or overnight.
- Prepare Dry Ingredients:
- In a bowl, whisk together flour, cornstarch, baking powder, baking soda, and salt. Set aside.
- Mix Wet Ingredients:
- In a large bowl, whisk melted butter, brown sugar, and granulated sugar until combined.
- Add egg and vanilla extract, whisking until smooth.
- Combine Ingredients:
- Gradually fold the dry mixture into the wet mixture. Mix until just combined.
- Incorporate Mix-ins:
- Fold in chopped chocolate and pistachios.
- Chill Dough:
- Scoop 4-tbsp portions of dough, forming balls.
- Place on a parchment-lined plate and chill for 1 hour.
- Stuff and Shape:
- Preheat oven to 350°F (175°C).
- Flatten each dough ball, place a frozen pistachio cream dollop in the center, and wrap the dough around it.
- Seal well and add extra chocolate or pistachios on top if desired.
- Bake:
- Arrange cookies on a parchment-lined baking sheet.
- Bake for 11–12 minutes, or until edges are set but centers remain soft.
- Finish:
- Sprinkle with flaky salt while warm.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack.
