Ingredients

  • 2 pounds boneless, skinless chicken thighs, cut into 1-inch cubes
  • 1/4 cup olive oil
  • 1/4 cup soy sauce
  • 1/4 cup white vinegar
  • 4 cloves garlic, minced
  • 1 tablespoon adobo seasoning
  • 1 tablespoon paprika
  • 1 teaspoon black pepper
  • 1 teaspoon oregano
  • 1/2 teaspoon cayenne pepper (optional)
  • 1 large onion, cut into chunks
  • 1 large bell pepper, cut into chunks
  • Wooden or metal skewers

Instructions

  1. In a large bowl, combine olive oil, soy sauce, white vinegar, minced garlic, adobo seasoning, paprika, black pepper, oregano, and cayenne pepper (if using). Whisk until well blended.
  2. Add the chicken cubes to the marinade, ensuring they are well coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or up to overnight for maximum flavor.
  3. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  4. Preheat a grill or grill pan over medium-high heat.
  5. Thread the marinated chicken, onion, and bell pepper onto the skewers, alternating between chicken and vegetables.
  6. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F.
  7. Remove the skewers from the grill and let them rest for a few minutes before serving.
