Ingredients
- 2 pounds boneless, skinless chicken thighs, cut into 1-inch cubes
- 1/4 cup olive oil
- 1/4 cup soy sauce
- 1/4 cup white vinegar
- 4 cloves garlic, minced
- 1 tablespoon adobo seasoning
- 1 tablespoon paprika
- 1 teaspoon black pepper
- 1 teaspoon oregano
- 1/2 teaspoon cayenne pepper (optional)
- 1 large onion, cut into chunks
- 1 large bell pepper, cut into chunks
- Wooden or metal skewers
Instructions
- In a large bowl, combine olive oil, soy sauce, white vinegar, minced garlic, adobo seasoning, paprika, black pepper, oregano, and cayenne pepper (if using). Whisk until well blended.
- Add the chicken cubes to the marinade, ensuring they are well coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or up to overnight for maximum flavor.
- If using wooden skewers, soak them in water for 30 minutes to prevent burning.
- Preheat a grill or grill pan over medium-high heat.
- Thread the marinated chicken, onion, and bell pepper onto the skewers, alternating between chicken and vegetables.
- Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F.
- Remove the skewers from the grill and let them rest for a few minutes before serving.
Notes
- For a smoky flavor, add a teaspoon of smoked paprika to the marinade.
- Feel free to substitute the chicken with shrimp or firm tofu for a different protein option.
