A delightful dessert featuring fresh raspberries topped with a buttery crumble.
Ingredients
- 2 cups fresh raspberries
- 1 cup granulated sugar, divided
- 1 tablespoon lemon juice
- 1 cup all-purpose flour
- 1/2 cup rolled oats
- 1/2 cup unsalted butter, softened
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the raspberries, 1/2 cup of sugar, and lemon juice. Gently toss to coat the raspberries and set aside to marinate for about 10 minutes.
- In another bowl, mix the flour, oats, remaining 1/2 cup of sugar, cinnamon, and salt.
- Add the softened butter and use your fingers or a pastry cutter to blend until the mixture resembles coarse crumbs.
- Spread the marinated raspberries evenly in a greased 9×9-inch baking dish.
- Sprinkle the crumble mixture evenly over the top of the raspberries.
- Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the raspberries are bubbling.
- Allow to cool for at least 10 minutes before serving.
Notes
- For a twist, try adding 1/2 teaspoon of vanilla extract to the raspberry mixture for extra flavor.
- You can also substitute half of the raspberries with blueberries or strawberries for a mixed berry crumble.
