Description

Ingredients

  • 2 cups fresh raspberries
  • 1 cup granulated sugar, divided
  • 1 tablespoon lemon juice
  • 1 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup unsalted butter, softened
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the raspberries, 1/2 cup of sugar, and lemon juice. Gently toss to coat the raspberries and set aside to marinate for about 10 minutes.
  3. In another bowl, mix the flour, oats, remaining 1/2 cup of sugar, cinnamon, and salt.
  4. Add the softened butter and use your fingers or a pastry cutter to blend until the mixture resembles coarse crumbs.
  5. Spread the marinated raspberries evenly in a greased 9×9-inch baking dish.
  6. Sprinkle the crumble mixture evenly over the top of the raspberries.
  7. Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the raspberries are bubbling.
  8. Allow to cool for at least 10 minutes before serving.

Notes

  • For a twist, try adding 1/2 teaspoon of vanilla extract to the raspberry mixture for extra flavor.
  • You can also substitute half of the raspberries with blueberries or strawberries for a mixed berry crumble.
