A festive and healthy treat made with frozen bananas, strawberries, and blueberries, perfect for summer celebrations.
Ingredients
- 3 medium ripe bananas
- 1 cup strawberries, hulled and sliced
- 1 cup blueberries
- 1 cup Greek yogurt (plain or vanilla)
- 2 tablespoons honey or maple syrup (optional)
- 1 teaspoon vanilla extract
- 1/4 cup granola (for topping)
Instructions
- Peel the bananas and cut them in half. Insert a popsicle stick into each half and place them on a parchment-lined baking sheet. Freeze for at least 1 hour until solid.
- In a mixing bowl, combine Greek yogurt, honey or maple syrup (if using), and vanilla extract. Stir until smooth.
- Once the bananas are frozen, remove them from the freezer. Dip each banana half into the yogurt mixture, ensuring they are fully coated.
- Roll the yogurt-coated bananas in the sliced strawberries and blueberries, pressing gently to adhere the fruit to the yogurt.
- Return the decorated bananas to the baking sheet and freeze for an additional 1-2 hours until the yogurt is firm.
- Before serving, sprinkle granola on top for added crunch. Enjoy your festive treat!
