Ingredients

  • 2 cups chopped rhubarb
  • 1 cup granulated sugar
  • 2 cups water
  • 1/2 cup lemon juice
  • 1/4 teaspoon salt
  • 2 cups ice cubes

Instructions

  1. In a medium saucepan, combine the chopped rhubarb, sugar, and water. Bring to a boil over medium heat, stirring occasionally until the sugar dissolves and the rhubarb is tender, about 5-7 minutes.
  2. Remove from heat and let the mixture cool for about 15 minutes.
  3. Once cooled, strain the rhubarb mixture through a fine mesh sieve into a bowl, pressing down to extract as much liquid as possible. Discard the solids.
  4. Stir in the lemon juice and salt into the rhubarb liquid.
  5. Pour the rhubarb mixture into a blender, add the ice cubes, and blend until smooth and slushy.
  6. Serve immediately in chilled glasses.
