A refreshing Rhubarb Slush recipe perfect for hot days.
Ingredients
- 2 cups chopped rhubarb
- 1 cup granulated sugar
- 2 cups water
- 1/2 cup lemon juice
- 1/4 teaspoon salt
- 2 cups ice cubes
Instructions
- In a medium saucepan, combine the chopped rhubarb, sugar, and water. Bring to a boil over medium heat, stirring occasionally until the sugar dissolves and the rhubarb is tender, about 5-7 minutes.
- Remove from heat and let the mixture cool for about 15 minutes.
- Once cooled, strain the rhubarb mixture through a fine mesh sieve into a bowl, pressing down to extract as much liquid as possible. Discard the solids.
- Stir in the lemon juice and salt into the rhubarb liquid.
- Pour the rhubarb mixture into a blender, add the ice cubes, and blend until smooth and slushy.
- Serve immediately in chilled glasses.
Notes
- For a sweeter slush, add more sugar to taste before blending.
- You can substitute the lemon juice with lime juice for a different flavor profile.
- Consider adding fresh mint leaves during blending for a refreshing herbal note.
