Description
Delicious roasted baby potatoes coated in garlic butter and topped with Parmesan cheese, perfect as a side dish.
Ingredients
- 2 pounds baby potatoes, halved
- 1/2 cup unsalted butter, melted
- 1 tablespoon minced garlic
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine the melted butter, minced garlic, dried thyme, dried rosemary, salt, and black pepper. Mix well.
- Add the halved baby potatoes to the bowl and toss until they are evenly coated with the garlic butter mixture.
- Spread the potatoes in a single layer on a large baking sheet lined with parchment paper.
- Roast in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and tender, stirring halfway through for even cooking.
- Remove the potatoes from the oven and sprinkle the grated Parmesan cheese over the top. Return to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and garnish with fresh parsley before serving.
Notes
- For a spicy kick, add 1/4 teaspoon of red pepper flakes to the garlic butter mixture.
- Substitute the Parmesan cheese with crumbled feta or goat cheese for a different flavor profile.
