Description

Delicious roasted baby potatoes coated in garlic butter and topped with Parmesan cheese, perfect as a side dish.


Ingredients

  • 2 pounds baby potatoes, halved
  • 1/2 cup unsalted butter, melted
  • 1 tablespoon minced garlic
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the melted butter, minced garlic, dried thyme, dried rosemary, salt, and black pepper. Mix well.
  3. Add the halved baby potatoes to the bowl and toss until they are evenly coated with the garlic butter mixture.
  4. Spread the potatoes in a single layer on a large baking sheet lined with parchment paper.
  5. Roast in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and tender, stirring halfway through for even cooking.
  6. Remove the potatoes from the oven and sprinkle the grated Parmesan cheese over the top. Return to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
  7. Remove from the oven and garnish with fresh parsley before serving.

  • For a spicy kick, add 1/4 teaspoon of red pepper flakes to the garlic butter mixture.
