Ingredients

  • 1 pound Italian sausage (mild or spicy, sliced)
  • 1 tablespoon olive oil
  • 1 bell pepper (any color, sliced)
  • 1 medium onion (sliced)
  • 2 cups zucchini (sliced)
  • 1 cup cherry tomatoes (halved)
  • 2 cloves garlic (minced)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh parsley (for garnish, optional)

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the sliced sausage and cook until browned, about 5-7 minutes.
  2. Add the sliced onion and bell pepper to the skillet. Sauté for another 3-4 minutes until the vegetables start to soften.
  3. Stir in the zucchini, cherry tomatoes, minced garlic, oregano, basil, salt, and pepper. Cook for an additional 5-7 minutes, stirring occasionally, until the zucchini is tender and the tomatoes have softened.
  4. Remove from heat and garnish with fresh parsley if desired. Serve hot.
