A delicious and easy one-pan meal featuring Italian sausage and a variety of colorful vegetables.
Ingredients
- 1 pound Italian sausage (mild or spicy, sliced)
- 1 tablespoon olive oil
- 1 bell pepper (any color, sliced)
- 1 medium onion (sliced)
- 2 cups zucchini (sliced)
- 1 cup cherry tomatoes (halved)
- 2 cloves garlic (minced)
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh parsley (for garnish, optional)
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the sliced sausage and cook until browned, about 5-7 minutes.
- Add the sliced onion and bell pepper to the skillet. Sauté for another 3-4 minutes until the vegetables start to soften.
- Stir in the zucchini, cherry tomatoes, minced garlic, oregano, basil, salt, and pepper. Cook for an additional 5-7 minutes, stirring occasionally, until the zucchini is tender and the tomatoes have softened.
- Remove from heat and garnish with fresh parsley if desired. Serve hot.
Notes
- For a lower-carb option, substitute the zucchini with cauliflower rice.
- Add a splash of balsamic vinegar for extra flavor before serving.
