Sausage Egg and Cheese Breakfast Roll-Ups that Delight!
Ingredients
- 6 large eggs
- 1/4 cup heavy cream
- 1/2 teaspoon sea salt
- 1/4 teaspoon freshly ground black pepper
- 1 tablespoon butter
- 1 cup cooked and crumbled breakfast sausage
- 1 cup grated Monterey Jack cheese
- 4 large whole wheat tortillas
- 1/4 cup guacamole (optional)
Instructions
- In a mixing bowl, beat the eggs with the heavy cream, sea salt, and black pepper until fluffy and well blended.
- In a large skillet, melt the butter over medium heat. Add the egg mixture and cook, stirring occasionally, until the eggs are soft and creamy, about 4-5 minutes.
- Once the eggs are cooked, remove the skillet from the heat and fold in the crumbled sausage and grated Monterey Jack cheese until the cheese is melted and the mixture is evenly combined.
- Place a whole wheat tortilla on a flat surface. Spoon one-fourth of the egg and sausage mixture into the center of the tortilla.
- Carefully fold the bottom of the tortilla up over the filling, then fold in the sides, and roll it tightly to enclose the filling. Repeat this process for the remaining tortillas and filling.
- Optional: Heat a non-stick skillet over medium heat and place the burritos seam side down. Cook for 2-3 minutes on each side until they are golden and slightly crispy.
- Serve the burritos warm, accompanied by guacamole if desired.
Notes
- For an extra flavor boost, mix in some diced bell peppers or onions with the egg mixture.
- Swap the breakfast sausage for chorizo or a plant-based sausage for a unique twist.
