Description

A delicious and savory galette featuring bacon, cherry tomatoes, spinach, and mozzarella cheese, all wrapped in a flaky crust.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1/2 cup unsalted butter, chilled and cubed
  • 68 tablespoons ice water
  • 4 ounces bacon, cooked and crumbled
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh spinach
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup mayonnaise
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine the flour and salt. Add the chilled butter and mix until the mixture resembles coarse crumbs.
  3. Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Form the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  4. On a floured surface, roll out the dough into a 12-inch circle. Transfer to the prepared baking sheet.
  5. In a small bowl, mix the mayonnaise and Dijon mustard. Spread this mixture evenly over the dough, leaving a 2-inch border around the edges.
  6. Layer the crumbled bacon, cherry tomatoes, spinach, and mozzarella cheese on top of the spread. Season with salt and pepper.
  7. Fold the edges of the dough over the filling, pleating as necessary to create a rustic edge. Brush the exposed dough with the beaten egg.
  8. Bake for 25-30 minutes, or until the crust is golden brown and the cheese is melted.
  9. Allow to cool for 5 minutes before slicing and serving.

Notes

  • For a vegetarian version, omit the bacon and add sautéed mushrooms or zucchini for extra flavor.
