Ingredients

  • For the Shrimp:
    • 1 lb medium shrimp, peeled and deveined
    • 1 teaspoon smoked paprika
    • ½ teaspoon garlic powder
    • ½ teaspoon onion powder
    • ½ teaspoon salt
    • ¼ teaspoon black pepper
    • ¼ teaspoon cayenne pepper (optional for extra heat)
    • 1 tablespoon olive oil
  • For the Spicy Mayo:
    • ½ cup mayonnaise
    • 2 tablespoons sriracha
    • 1 tablespoon fresh lime juice
  • For the Rice Base:
    • 2 cups cooked jasmine or brown rice
    • 1 teaspoon rice vinegar (optional, for added flavor)
  • Toppings & Garnishes:
    • ½ cup shredded carrots
    • 1 avocado, sliced
    • ½ cup cucumber, sliced
    • 2 green onions, chopped
    • 1 teaspoon sesame seeds
    • 1 tablespoon soy sauce or tamari

Instructions

1. Cook the Shrimp
In a bowl, toss the shrimp with smoked paprika, garlic powder, onion powder, salt, black pepper, and cayenne (if using). Heat olive oil in a skillet over medium heat. Cook shrimp for 2-3 minutes per side until pink and slightly crispy. Remove from heat and set aside.

2. Make the Spicy Mayo
In a small bowl, whisk together mayonnaise, sriracha, and lime juice until smooth. Adjust spice level to taste.

3. Prepare the Rice
Cook rice according to package instructions. Fluff with a fork and mix in rice vinegar for added flavor, if desired.

4. Assemble the Bowls
Divide rice into serving bowls. Top with cooked shrimp, shredded carrots, avocado slices, and cucumber. Sprinkle with chopped green onions and sesame seeds.

5. Drizzle & Serve
Drizzle the spicy mayo over the bowls and add a splash of soy sauce or tamari. Serve immediately and enjoy!
