Ingredients
- 1 pound chicken breasts
- 1 pound chicken thighs
- 1 cup diced onion
- 1 cup buffalo wing sauce (plus more for serving)
- 14.5 oz can fire-roasted diced tomatoes
- 2 (4 oz) cans green chiles
- 1 oz packet ranch seasoning mix
- 1 tablespoon chili powder
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 2 ½ cups chicken broth
- 2 (15.5 oz) cans white beans, drained and rinsed
- 8 oz cream cheese, softened

Instructions
- Prepare the Slow Cooker: Spray the inside of your slow cooker with nonstick cooking spray.
- Add Ingredients: Place chicken breasts, chicken thighs, diced onion, buffalo sauce, fire-roasted tomatoes, green chiles, ranch seasoning, chili powder, smoked paprika, cumin, and chicken broth into the slow cooker. Stir to combine.
- Cook: Cover and cook on High for 2 hours or Low for 3–4 hours.
- Shred the Chicken: Remove the chicken from the slow cooker and shred it with two forks.
- Add Beans and Cream Cheese: Return the shredded chicken to the slow cooker. Stir in the white beans and softened cream cheese until fully melted and blended. Cook for another 15 minutes.
- Adjust Consistency: Add more chicken broth if you prefer a thinner chili.
- Serve: Ladle the chili into bowls and top with sour cream, shredded Cheddar cheese, and green onions. Drizzle with extra buffalo sauce for an added kick.
Notes
- Use both chicken breasts and thighs for the best texture and flavor.
- For a milder version, reduce the buffalo wing sauce or add more cream cheese.
- Mash some of the white beans before adding them to naturally thicken the chili.
