1 large onion, thinly sliced
2 medium carrots, cut into rounds
4 cloves garlic, finely chopped
1 pound smoked sausage, cut into half-moons (such as kielbasa or andouille)
1 can (14.5 ounces) diced tomatoes, with juice
1 teaspoon smoked paprika
1 teaspoon dried thyme
1 teaspoon sea salt
1/2 teaspoon freshly ground black pepper
1/4 teaspoon crushed red pepper flakes (optional, for a kick)
1 tablespoon extra virgin olive oil
Instructions
Prepare the Ingredients: Wash and chop the cabbage into bite-sized pieces. Slice the onion, cut the carrots into rounds, and finely chop the garlic.
Season the Mixture: In a separate bowl, mix the diced tomatoes (with juice), smoked paprika, thyme, salt, black pepper, and red pepper flakes.
Assemble the Slow Cooker: Add the cabbage, onions, carrots, garlic, and sausage into the slow cooker. Pour the seasoned tomato mixture over the top. Drizzle with olive oil and stir to combine.
Cook: Cover and cook on low for 6-8 hours or high for 3-4 hours until the cabbage is tender.
Serve: Stir well and enjoy as a standalone dish or serve over rice, quinoa, or mashed potatoes.

Meat Variations: Swap smoked sausage with chicken thighs, pork shoulder, or ground turkey.
Vegetarian Option: Use plant-based sausage, chickpeas, or lentils.
Flavor Enhancements: Add a splash of apple cider vinegar for a tangy twist or garnish with fresh parsley before serving.
