Ingredients
- 2 pounds boneless, skinless chicken thighs
- 1 can (20 ounces) pineapple chunks in juice, undrained
- 1 cup teriyaki sauce
- 1/2 cup soy sauce
- 1/4 cup brown sugar
- 1 tablespoon minced garlic
- 1 tablespoon minced ginger
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1/2 cup green onions, chopped
- Cooked rice, for serving
Instructions
- Place the chicken thighs in the slow cooker.
- In a medium bowl, combine the pineapple chunks with juice, teriyaki sauce, soy sauce, brown sugar, minced garlic, and minced ginger. Mix well.
- Pour the sauce mixture over the chicken in the slow cooker.
- Add the sliced red and green bell peppers on top of the chicken.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
- Before serving, shred the chicken with two forks and stir to combine with the sauce and vegetables.
- Serve the Hawaiian chicken over cooked rice and garnish with chopped green onions.
