A delicious and moist sour cream banana bread recipe that is perfect for breakfast or a snack.
Ingredients
- 3 ripe bananas, mashed
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup sour cream
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon (optional)
- 1/2 cup chopped walnuts or pecans (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
- In a large mixing bowl, combine the mashed bananas and sugar. Mix until well combined.
- Add the softened butter to the banana mixture and stir until creamy.
- Beat in the eggs, one at a time, followed by the vanilla extract and sour cream. Mix until smooth.
- In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon (if using).
- Gradually add the dry ingredients to the wet ingredients, stirring just until combined. Be careful not to overmix.
- If desired, fold in the chopped nuts.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake in the preheated oven for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Notes
- For added flavor, try mixing in 1/2 cup of chocolate chips or dried fruit like raisins or cranberries.
- If you prefer a healthier version, substitute half of the all-purpose flour with whole wheat flour and reduce the sugar to 3/4 cup.
