Ingredients
For the Chicken:
- 5 boneless chicken thighs
- 1/2 cup cornstarch
- Kosher salt (to taste)
- Freshly ground black pepper (to taste)
- 2 tbsp sesame seeds (for garnish)
- 2 tbsp chopped scallion (for garnish)
- 2 tbsp oil (for frying)
- 2 tbsp unsalted butter
For the Sauce:
- 3 tbsp honey
- 2 tbsp soy sauce
- 1 tbsp dark soy sauce
- 1 tsp five-spice powder
- 2 cloves garlic (grated)
Instructions
- Prepare the Chicken: Pat the chicken thighs dry with a paper towel. Mix cornstarch with salt and pepper, and coat each piece of chicken thoroughly with the mixture.
- Fry the Chicken: Heat oil in a pan over medium-high heat. Fry the chicken for 5–7 minutes on each side until golden and crispy. Remove and set aside.
- Prepare the Glaze: In the same pan, melt butter over medium heat, scraping up the caramelized bits. Mix honey, soy sauce, dark soy sauce, five-spice powder, and garlic in a bowl, then pour into the pan. Simmer for 5 minutes until the sauce thickens.
- Glaze the Chicken: Return the chicken to the pan, coating it with the glaze. Let it simmer for 2–3 minutes.
- Garnish and Serve: Slice the chicken and garnish with sesame seeds and chopped scallions. Serve hot with steamed rice and vegetables.
Notes
- Chicken Selection: Boneless thighs yield the best results, but drumsticks or chicken breasts can be used with slight adjustments in cooking time.
- Adjusting Sweetness/Spiciness: Add more honey for sweetness or chili flakes for extra heat.
- Fond: Don’t discard the caramelized bits from frying the chicken as they add rich flavor to the sauce.
- Fresh Garlic: Grated garlic distributes its flavor evenly throughout the sauce.
