Ingredients
- 2 pounds bone-in, skin-on chicken thighs and drumsticks
 - 1/4 cup olive oil
 - 1/4 cup white wine vinegar
 - 1 tablespoon smoked paprika
 - 1 tablespoon garlic powder
 - 1 tablespoon onion powder
 - 1 teaspoon dried oregano
 - 1 teaspoon dried thyme
 - 1 teaspoon cayenne pepper (adjust for spice preference)
 - 1 teaspoon salt
 - 1/2 teaspoon black pepper
 - 1 lemon, juiced
 - Fresh parsley, chopped (for garnish)
 
Instructions
- In a large bowl, whisk together olive oil, white wine vinegar, smoked paprika, garlic powder, onion powder, oregano, thyme, cayenne pepper, salt, black pepper, and lemon juice until well combined.
 - Add the chicken pieces to the marinade, ensuring they are well coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or preferably overnight for maximum flavor.
 - Preheat your grill to medium-high heat.
 - Remove the chicken from the marinade and let any excess drip off. Discard the marinade.
 - Place the chicken skin-side down on the grill. Cook for 15-20 minutes, turning occasionally, until the skin is crispy and the internal temperature reaches 165°F.
 - Remove the chicken from the grill and let it rest for 5 minutes before serving. Garnish with chopped parsley.

- For extra flavor, try adding a tablespoon of honey to the marinade for a touch of sweetness.
 - If you prefer a milder version, reduce the cayenne pepper or omit it entirely.
