Ingredients

  • 2 pounds bone-in, skin-on chicken thighs and drumsticks
  • 1/4 cup olive oil
  • 1/4 cup white wine vinegar
  • 1 tablespoon smoked paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon cayenne pepper (adjust for spice preference)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 lemon, juiced
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large bowl, whisk together olive oil, white wine vinegar, smoked paprika, garlic powder, onion powder, oregano, thyme, cayenne pepper, salt, black pepper, and lemon juice until well combined.
  2. Add the chicken pieces to the marinade, ensuring they are well coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or preferably overnight for maximum flavor.
  3. Preheat your grill to medium-high heat.
  4. Remove the chicken from the marinade and let any excess drip off. Discard the marinade.
  5. Place the chicken skin-side down on the grill. Cook for 15-20 minutes, turning occasionally, until the skin is crispy and the internal temperature reaches 165°F.
  6. Remove the chicken from the grill and let it rest for 5 minutes before serving. Garnish with chopped parsley.
