Ingredients
- 1 pound large shrimp, peeled and deveined
- 1 tablespoon avocado oil
- 1 teaspoon smoked paprika
- 1 teaspoon ground coriander
- 1/2 teaspoon onion powder
- 1/2 teaspoon crushed red pepper flakes (adjust to taste)
- Salt and freshly ground black pepper
- 8 small corn or flour tortillas
- 1 cup shredded lettuce
- 1 ripe mango, diced
- 1/2 red bell pepper, finely chopped
- 1 serrano pepper, seeded and minced
- 1/4 cup fresh mint, chopped
- Juice of 1 lime
- Pinch of salt
Instructions
- In a large mixing bowl, combine the shrimp with avocado oil, smoked paprika, ground coriander, onion powder, crushed red pepper flakes, salt, and black pepper. Mix well and marinate for about 20 minutes.
- Prepare the tropical salsa by combining diced mango, red bell pepper, serrano pepper, mint, lime juice, and a pinch of salt in another bowl. Stir gently and set aside.
- Heat a non-stick skillet over medium-high heat and add the marinated shrimp. Cook for approximately 3-4 minutes, flipping halfway through, until they turn pink and are cooked through. Remove from heat.
- Warm the tortillas in a separate skillet or microwave wrapped in a damp paper towel until soft.
- To build your tacos, layer a few shrimp onto each tortilla, add shredded lettuce, and top with tropical salsa.
- Serve immediately for a burst of flavor!
