Ingredients
For the Filling and Wrappers:
- 8 ounces cream cheese, softened
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup fresh strawberries, diced
- 2 tablespoons white sugar
- 1 teaspoon cornstarch
- 12 eggroll wrappers
For Frying and Garnishing:
- Vegetable oil (for frying)
- Powdered sugar (for dusting)
Instructions
- Prepare the Cheesecake Filling:
- Beat softened cream cheese, powdered sugar, and vanilla extract in a medium bowl until smooth. Set aside.
- Cook the Strawberry Filling:
- In a small saucepan, combine diced strawberries, white sugar, and cornstarch.
- Cook over medium heat, stirring occasionally, until thick and jam-like (5–7 minutes). Cool completely.
- Assemble the Eggrolls:
- Lay an eggroll wrapper flat (diamond-shaped).
- Place 1 tablespoon of cheesecake filling and 1 teaspoon of strawberry filling in the center.
- Fold the bottom corner over the filling, fold in the sides, and roll tightly into a log. Seal edges with water.
- Heat the Oil:
- Pour vegetable oil into a skillet to about 2 inches deep and heat to 350°F (175°C).
- Fry the Eggrolls:
- Fry eggrolls in batches, 2–3 minutes each, turning occasionally, until golden and crispy.
- Drain on a paper towel-lined plate.
- Dust and Serve:
- While warm, dust with powdered sugar. Serve immediately and enjoy!

- Don’t overfill the wrappers to prevent leaks during frying.
