Ingredients

For the Filling and Wrappers:

  • 8 ounces cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, diced
  • 2 tablespoons white sugar
  • 1 teaspoon cornstarch
  • 12 eggroll wrappers

For Frying and Garnishing:

  • Vegetable oil (for frying)
  • Powdered sugar (for dusting)

Instructions

  • Prepare the Cheesecake Filling:
    • Beat softened cream cheese, powdered sugar, and vanilla extract in a medium bowl until smooth. Set aside.
  • Cook the Strawberry Filling:
    • In a small saucepan, combine diced strawberries, white sugar, and cornstarch.
    • Cook over medium heat, stirring occasionally, until thick and jam-like (5–7 minutes). Cool completely.
  • Assemble the Eggrolls:
    • Lay an eggroll wrapper flat (diamond-shaped).
    • Place 1 tablespoon of cheesecake filling and 1 teaspoon of strawberry filling in the center.
    • Fold the bottom corner over the filling, fold in the sides, and roll tightly into a log. Seal edges with water.
  • Heat the Oil:
    • Pour vegetable oil into a skillet to about 2 inches deep and heat to 350°F (175°C).
  • Fry the Eggrolls:
    • Fry eggrolls in batches, 2–3 minutes each, turning occasionally, until golden and crispy.
    • Drain on a paper towel-lined plate.
  • Dust and Serve:
    • While warm, dust with powdered sugar. Serve immediately and enjoy!
