Ingredients

  • 1 cup whole milk
  • 3 large eggs
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • 1 cup fresh strawberries, hulled and sliced
  • 1 cup fresh mango, diced
  • 1 cup whipped cream (store-bought or homemade)
  • Mint leaves for garnish (optional)


Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture, alternating with the milk. Mix until just combined.
  5. Divide the batter evenly between the prepared cake pans and smooth the tops.
  6. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  8. Once cooled, place one cake layer on a serving platter. Spread a layer of whipped cream over the top, then layer with half of the sliced strawberries and diced mango.
  9. Place the second cake layer on top and repeat the process with the remaining whipped cream, strawberries, and mango.
  10. Garnish with mint leaves if desired. Slice and serve.
