Description
A delightful and refreshing cake made with layers of fluffy vanilla cake, fresh strawberries, and mango, topped with whipped cream.
Ingredients
- 2 cups all-purpose flour
- 1 ½ cups granulated sugar
- ½ cup unsalted butter, softened
- 1 cup whole milk
- 3 large eggs
- 2 teaspoons baking powder
- 1 teaspoon vanilla extract
- ½ teaspoon salt
- 1 cup fresh strawberries, hulled and sliced
- 1 cup fresh mango, diced
- 1 cup whipped cream (store-bought or homemade)
- Mint leaves for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture, alternating with the milk. Mix until just combined.
- Divide the batter evenly between the prepared cake pans and smooth the tops.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
- Once cooled, place one cake layer on a serving platter. Spread a layer of whipped cream over the top, then layer with half of the sliced strawberries and diced mango.
- Place the second cake layer on top and repeat the process with the remaining whipped cream, strawberries, and mango.
- Garnish with mint leaves if desired. Slice and serve.
Notes
- For added flavor, consider adding a splash of orange juice or zest to the cake batter.
- Substitute the strawberries and mango with other fruits like blueberries and peaches for a different twist.
