  • ¼ cup milk (dairy or non-dairy alternative)
  • 3.5 tablespoons strawberry liquid (from the cooked strawberries)
  • ¼ teaspoon red food coloring (optional for a more vibrant color)

Instructions

  1. Prepare the Strawberry Liquid: In a saucepan, cook strawberries and sugar over medium heat until soft and syrupy. Strain the mixture, reserving the liquid, and let it cool.
  2. Mix the Dry Ingredients: In a bowl, whisk together flour, baking powder, cornstarch, and salt.
  3. Cream Butter and Sugar: Beat butter and sugar until creamy. Add the cornstarch-water mixture, milk, strawberry liquid, and vanilla extract, mixing until smooth.
  4. Incorporate the Dry Ingredients: Gradually mix in the dry ingredients until fully combined.
  5. Chill the Dough: Cover and refrigerate for at least 2.5 hours (or overnight) to prevent excessive spreading.
  6. Shape and Coat: Scoop dough into small balls and roll them in granulated sugar.
  7. Bake to Perfection: Preheat oven to 325°F (163°C). Place dough balls on a lined baking sheet and bake for 15 minutes.
  8. Reshape While Warm: Use a spatula to gently reshape cookies immediately after baking.
