Description

A delicious and savory grilled cheese sandwich featuring sun-dried tomatoes, fresh spinach, and creamy ricotta cheese.


Ingredients

  • 8 slices of whole grain bread
  • 1 cup ricotta cheese
  • 1 cup fresh spinach, finely chopped
  • 1/2 cup sun-dried tomatoes, diced (oil-packed, drained)
  • 1 cup shredded mozzarella cheese
  • 4 tablespoons softened butter
  • Salt and black pepper to taste

Instructions

  1. In a bowl, blend the ricotta cheese with the chopped spinach and diced sun-dried tomatoes. Season with salt and black pepper, mixing thoroughly.
  2. Generously spread the ricotta blend onto 4 slices of bread, then sprinkle a layer of shredded mozzarella on top.
  3. Cap each with the remaining slices of bread to form sandwiches.
  4. Preheat a skillet over medium heat. Evenly spread 1 tablespoon of softened butter on the outer sides of each sandwich.
  5. Place the sandwiches in the skillet, cooking for approximately 3-4 minutes per side, until they are golden brown and the cheese has melted.
  6. Once cooked, remove from the skillet and allow to cool slightly before cutting them in half.
