Ingredients
- 2 cups mixed greens (spinach, arugula, romaine)
- 1 cup halved cherry tomatoes
- 1 cup diced cucumber
- 1/2 cup diced bell pepper (any color)
- 1/4 cup thinly sliced red onion
- 1/2 cup shredded carrots
- 1/4 cup crumbled feta cheese
- 1/4 cup sunflower seeds
- 1/4 cup extra virgin olive oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions
- Place the mixed greens in a large serving bowl.
- Add the halved cherry tomatoes, diced cucumber, bell pepper, sliced red onion, shredded carrots, crumbled feta, and sunflower seeds on top.
- In a separate small bowl, combine the olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper, then whisk until smooth.
- Pour the dressing over the salad ingredients and gently toss until evenly coated.
- Serve the salad right away or let it chill in the refrigerator for up to half an hour to enhance the flavors before serving.
