Ingredients

  • 1 cup halved cherry tomatoes
  • 1 cup diced cucumber
  • 1/2 cup diced bell pepper (any color)
  • 1/4 cup thinly sliced red onion
  • 1/2 cup shredded carrots
  • 1/4 cup crumbled feta cheese
  • 1/4 cup sunflower seeds
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Place the mixed greens in a large serving bowl.
  2. Add the halved cherry tomatoes, diced cucumber, bell pepper, sliced red onion, shredded carrots, crumbled feta, and sunflower seeds on top.
  3. In a separate small bowl, combine the olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper, then whisk until smooth.
