Ingredients

Main Ingredients:

  • 1 pound lean ground beef
  • 1 packet taco seasoning
  • 2 cups crushed tortilla chips
  • 1 cup black beans (drained and rinsed)
  • 1 cup corn (frozen or canned)
  • 2 cups salsa
  • 2 cups shredded Mexican cheese blend

Optional Fresh Toppings:

  • Green onions, thinly sliced
  • Diced tomatoes
  • Sliced olives
  • Shredded lettuce
  • Sour cream
  • Extra salsa

Instructions

1. Preheat the Oven

  • Preheat your oven to 375°F (190°C) to ensure even baking.

2. Cook the Ground Beef

  • Heat a skillet over medium heat.
  • Add the ground beef and cook until browned, breaking it apart with a spatula.
  • Remove excess grease with a folded paper towel using your spatula.

3. Add Taco Seasoning

  • Stir in the taco seasoning with the cooked beef, ensuring it’s evenly coated.

4. Combine the Filling

  • Add salsa, black beans, corn, and 1 cup of shredded cheese to the skillet with the beef.
  • Stir until the ingredients are evenly mixed and the cheese begins to melt.

5. Layer the Casserole

  • Spread the crushed tortilla chips evenly over the bottom of a 9×13-inch baking dish.
  • Spoon the beef mixture over the chips, spreading it into an even layer.
  • Sprinkle the remaining shredded cheese evenly over the top.

6. Bake the Casserole

  • Place the baking dish in the preheated oven and bake for 15–20 minutes, or until the cheese is melted, bubbly, and golden brown.

7. Add Fresh Toppings

  • Remove the casserole from the oven and let it cool slightly.
  • Garnish with fresh toppings like green onions, diced tomatoes, shredded lettuce, or sour cream.

8. Serve and Enjoy

  • Scoop the casserole into bowls and serve with your favorite sides or drinks.

Notes

  • Customize the Spice Level: Use mild, medium, or hot taco seasoning and salsa to match your family’s preference.
  • Prevent Soggy Chips: Serve immediately or layer the chips on top instead of at the bottom.
