Description

Light, airy, and packed with protein, this Fluffy Cottage Cheese Cloud Bread is a delightful low-carb, gluten-free alternative to traditional bread. Perfect for sandwiches, mini pizzas, or as a simple snack, this versatile bread is a must-try!

Ingredients

  • 3 large eggs, separated
  • 1/2 cup cottage cheese, blended until smooth
  • 1/4 teaspoon cream of tartar
  • 1/2 teaspoon salt
  • 1 tablespoon cornstarch or arrowroot powder (optional, for structure)
  • 1 teaspoon honey or a pinch of sweetener (optional, for a hint of sweetness)

Instructions

  1. Preheat & Prepare: Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper. Separate egg whites and yolks into two bowls.
  2. Whip Egg Whites: Add cream of tartar to egg whites and whip with a hand or stand mixer until stiff peaks form.
  3. Mix Yolk Base: In a separate bowl, mix egg yolks with blended cottage cheese, salt, cornstarch (if using), and honey or sweetener. Stir until smooth.
  4. Combine: Gently fold whipped egg whites into the yolk mixture in thirds, keeping the mixture light and fluffy.
  5. Shape: Scoop the batter onto the prepared baking sheet, forming 6-8 rounds. Shape them evenly using the back of a spoon.
  6. Bake: Bake for 25-30 minutes until golden brown and set. Let cool completely before serving.

Notes

  • Substitutes: Use ricotta or cream cheese instead of cottage cheese.
  • Storage: Refrigerate in an airtight container for up to 3 days or freeze for up to a month.
  • Reheating: Warm in an oven or toaster for the best texture.
  • Sweet Variation: Add vanilla extract and a touch of cinnamon for a sweeter version.
  • Common Issue Fix: If the bread turns out flat, ensure the egg whites are whipped to stiff peaks and gently folded.
