Ingredients
- 3 pieces bacon, diced into small cubes
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour (or 1:1 gluten-free flour)
- 1 cup lager beer
- 1/2 cup whole milk
- 2 cups shredded white cheddar cheese (about 8 oz)
- 1 cup shredded sharp yellow cheddar (about 4 oz)
- 4 ounces cream cheese
- 1 tablespoon Dijon mustard
- 1 tablespoon Worcestershire sauce
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1 tablespoon freshly chopped chives
Instructions
- Crisp the Bacon – In a medium cast-iron pan, cook diced bacon over medium heat until crispy. Remove and set aside, discarding excess fat.
- Create a Roux – In the same pan over medium heat, melt butter and whisk in flour. Cook for about 3 minutes until combined and smooth, without browning.
- Add Beer & Milk – Slowly pour in beer, stirring well. Simmer for 2 minutes. Add milk and continue simmering for another 2 minutes until the mixture thickens.
- Melt the Cheese – Reduce heat to low and stir in cream cheese, white cheddar, and sharp cheddar. Stir continuously until fully melted and smooth.
- Enhance Flavor – Stir in Dijon mustard, Worcestershire sauce, onion powder, garlic powder, and chopped chives. Mix well.
- Top & Serve – Sprinkle crispy bacon on top. Serve immediately with pretzels, bread, or chips. Keep warm in a fondue pot or warming dish for the best texture.
Notes
- For a thicker dip, cook longer; for a thinner dip, add a splash of milk or beer.
- Best served warm to maintain a smooth, creamy consistency.
- Experiment with different beer styles to adjust flavor.
- Store leftovers in an airtight container for up to 3 days. Reheat gently over low heat, stirring frequently.
