Ingredients
- 1 cup cookie butter (Biscoff or Speculoos)
- 1/2 cup sugar (white sugar recommended)
- 1 large egg
- 1/3 cup oat flour (increase to 1/2 cup if the mixture is too moist)
Instructions
- Preheat & Prep: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Mix It Up: In a large bowl, whisk together the egg and sugar until smooth. Add in the cookie butter and stir until fully combined.
- Incorporate Flour: Add oat flour and mix well using a wooden spoon or a stand mixer paddle.
- Chill Time: Cover the dough and refrigerate for 30 minutes to prevent excessive spreading.
- Shape & Bake: Scoop small dough balls using an ice cream scoop or tablespoon and place them 1-2 inches apart on the baking sheet. Press the tops lightly with a fork in a crisscross pattern.
- Bake to Perfection: Bake for 6-8 minutes, or until golden brown.
- Cool & Enjoy: Let cookies cool on the sheet for a few minutes before transferring them to a wire rack.
Notes
- Chilling the dough ensures a better texture and prevents the cookies from spreading too much.
- If the dough feels too sticky, add a little extra oat flour.
- For an extra indulgent twist, mix in chocolate chips or drizzle with melted chocolate.
- Store cookies in an airtight container at room temperature for up to 3 days or freeze for up to 3 months.
