  • 1/2 cup salted butter, softened
  • 1/2 cup light brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 1/2 tsp vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1 cup chocolate chips (reserve 1/4 cup for topping)

Instructions

  • Prepare the Pan and Oven:
    • Preheat your oven to 350°F (175°C).
    • Grease a 9×13-inch baking pan and line it with parchment paper, leaving an overhang for easy removal.
  • Make the Brownie Batter:
    • Melt butter in a saucepan over medium-low heat.
    • Add chopped chocolate and whisk until smooth.
    • Stir in cocoa powder and instant coffee. Let cool for 5 minutes.
    • Mix in sugar, vanilla, egg, and egg yolk.
    • Fold in flour and baking powder until just combined. Set aside.
  • Make the Cookie Dough:
    • Beat softened butter, brown sugar, and granulated sugar until fluffy (3 minutes).
    • Add egg and vanilla extract, mixing well.
    • Whisk flour, baking soda, and salt in a separate bowl.
    • Gradually mix dry ingredients into the wet mixture. Stir in chocolate chips.
  • Assemble the Brookies:
    • Drop alternating spoonfuls of brownie batter and cookie dough into the prepared pan.
