Ingredients
- 2 tablespoons olive oil (for sautéing)
- 1 large onion, diced
- 1 can (28 oz) crushed tomatoes
- 3 cups water (adjust for desired consistency)
- ½ cup basmati rice (or brown rice for a nuttier flavor)
- ½ teaspoon salt
- ¼ cup fresh basil, chopped (optional, for garnish)
Instructions
Step 1: Sauté the Onion
- Heat olive oil in a large soup pot over medium heat.
- Add the diced onion and sauté for 7–8 minutes, stirring occasionally, until soft and translucent.
Step 2: Add Tomatoes and Water
- Reduce the heat to low.
- Pour in the crushed tomatoes, water, and salt. Stir to combine.
- Bring the mixture to a gentle boil over medium-high heat.
Step 3: Add the Rice
- Once the soup is boiling, add the basmati rice.
- Stir well to prevent the rice from sticking to the pot.
- Reduce the heat to low, cover, and let the soup simmer for 10–15 minutes (30–35 minutes for brown rice), stirring occasionally.
Step 4: Let the Rice Cook Completely
- Remove the pot from the heat but keep it covered for another 10 minutes.
- This allows the rice to fully cook and absorb the tomato flavors.
Step 5: Garnish and Serve
- Ladle the soup into bowls and garnish with freshly chopped basil, if desired.
- Serve warm and enjoy with crusty bread or a light salad.
Notes
- Rice Options: Use basmati rice for a quick-cooking option or brown rice for added fiber and a nutty flavor. Adjust cooking time accordingly.
- Consistency Adjustment: For a thicker soup, reduce the water. For a thinner consistency, add more water or vegetable stock.
- Storage Tips: Store leftovers in an airtight container in the fridge for up to 3 days. The flavors deepen as it sits, making it even better the next day.
- Freezing Tips: Freeze the soup without rice to prevent it from absorbing too much liquid. Add cooked rice when reheating.
