Description

Warm up with a comforting bowl of Tomato Rice Soup, a perfect combination of tangy tomatoes and hearty rice simmered to perfection. This quick and easy recipe is versatile, budget-friendly, and customizable to suit your taste. Perfect for any season, it’s a satisfying dish you’ll love making again and again.

Ingredients

  • 2 tablespoons olive oil (for sautéing)
  • 1 large onion, diced
  • 1 can (28 oz) crushed tomatoes
  • 3 cups water (adjust for desired consistency)
  • ½ cup basmati rice (or brown rice for a nuttier flavor)
  • ½ teaspoon salt
  • ¼ cup fresh basil, chopped (optional, for garnish)

Instructions

Step 1: Sauté the Onion

  • Heat olive oil in a large soup pot over medium heat.
  • Add the diced onion and sauté for 7–8 minutes, stirring occasionally, until soft and translucent.

Step 2: Add Tomatoes and Water

  • Reduce the heat to low.
  • Pour in the crushed tomatoes, water, and salt. Stir to combine.
  • Bring the mixture to a gentle boil over medium-high heat.

Step 3: Add the Rice

  • Once the soup is boiling, add the basmati rice.
  • Stir well to prevent the rice from sticking to the pot.
  • Reduce the heat to low, cover, and let the soup simmer for 10–15 minutes (30–35 minutes for brown rice), stirring occasionally.

Step 4: Let the Rice Cook Completely

  • Remove the pot from the heat but keep it covered for another 10 minutes.
  • This allows the rice to fully cook and absorb the tomato flavors.

Step 5: Garnish and Serve

  • Ladle the soup into bowls and garnish with freshly chopped basil, if desired.
  • Serve warm and enjoy with crusty bread or a light salad.

Notes

  • Rice Options: Use basmati rice for a quick-cooking option or brown rice for added fiber and a nutty flavor. Adjust cooking time accordingly.
  • Consistency Adjustment: For a thicker soup, reduce the water. For a thinner consistency, add more water or vegetable stock.
  • Storage Tips: Store leftovers in an airtight container in the fridge for up to 3 days. The flavors deepen as it sits, making it even better the next day.
  • Freezing Tips: Freeze the soup without rice to prevent it from absorbing too much liquid. Add cooked rice when reheating.
