Description

Ingredients

  • 8 ounces elbow macaroni
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes, drained
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup fresh spinach, chopped
  • 1/2 cup breadcrumbs
  • 2 tablespoons butter, melted

Instructions

  1. Cook the elbow macaroni according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add the drained diced tomatoes, heavy cream, mozzarella cheese, and half of the Parmesan cheese to the skillet. Stir until the cheeses are melted and the mixture is smooth.
  5. Season with dried basil, dried oregano, salt, and pepper. Fold in the chopped spinach and cooked macaroni until well combined.
  6. Preheat your oven to 350°F. Transfer the mac and cheese mixture to a greased 9×13 inch baking dish.
  7. In a small bowl, combine the breadcrumbs and melted butter. Sprinkle the breadcrumb mixture evenly over the mac and cheese.
  8. Bake in the preheated oven for 20-25 minutes, or until the top is golden and bubbly.
  9. Let it cool for a few minutes before serving.
