Ingredients
For the Graham Cracker Crust:
- 1 cup graham cracker crumbs
- 2 tablespoons granulated sugar
- 4 tablespoons unsalted butter, melted
For the Cheesecake Filling:
- 16 oz cream cheese, softened
- ½ cup granulated sugar
- 2 large eggs
- ½ cup sour cream
- ½ cup heavy cream
- 1 vanilla bean, split and seeds scraped (or 1 tablespoon vanilla extract)
For the Crème Brûlée Topping:
- ¼ cup granulated sugar
Instructions
Step 1: Prepare the Crust
- Preheat oven to 325°F (163°C).
- Line a muffin tin with cupcake liners.
- In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined.
- Divide the mixture evenly into each cupcake liner and press down firmly.
- Bake for 5 minutes, then set aside to cool.
Step 2: Make the Cheesecake Filling
- In a large bowl, beat cream cheese and sugar until smooth and creamy.
- Add eggs one at a time, mixing just until incorporated.
- Mix in sour cream, heavy cream, and vanilla bean seeds until well combined.
- Pour the batter over the pre-baked crusts, filling each liner almost to the top.
- Bake for 18-20 minutes, or until the centers are set but still slightly jiggly.
- Allow to cool at room temperature, then refrigerate for at least 4 hours.
Step 3: Caramelize the Sugar Topping
- Before serving, sprinkle a thin, even layer of granulated sugar on each chilled cupcake.
- Using a kitchen torch, caramelize the sugar until golden and crisp.
- Let the topping harden for a few minutes, then serve and enjoy!
Notes
- For Intense Vanilla Flavor: Use real vanilla bean for the best taste, but vanilla extract works as a substitute.
- Prevent Overmixing: Mix ingredients just until combined to avoid air bubbles and cracking.
- Chilling Is Key: Allow at least 4 hours (or overnight) for the best texture.
- No Torch? No Problem! Use your oven’s broiler for 1-2 minutes, watching closely to avoid burning.
