These elegant cupcakes are rich, creamy, and slightly crunchy, making them ideal for special occasions, dinner parties, or a well-deserved treat. With real vanilla bean flavor and a signature brûléed topping, these cupcakes are as impressive as they are delicious!

Ingredients

For the Graham Cracker Crust:

  • 1 cup graham cracker crumbs
  • 2 tablespoons granulated sugar
  • 4 tablespoons unsalted butter, melted

For the Cheesecake Filling:

  • 16 oz cream cheese, softened
  • ½ cup granulated sugar
  • 2 large eggs
  • ½ cup sour cream
  • ½ cup heavy cream
  • 1 vanilla bean, split and seeds scraped (or 1 tablespoon vanilla extract)

For the Crème Brûlée Topping:

  • ¼ cup granulated sugar

Instructions

Step 1: Prepare the Crust

  1. Preheat oven to 325°F (163°C).
  2. Line a muffin tin with cupcake liners.
  3. In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined.
  4. Divide the mixture evenly into each cupcake liner and press down firmly.
  5. Bake for 5 minutes, then set aside to cool.

Step 2: Make the Cheesecake Filling

  1. In a large bowl, beat cream cheese and sugar until smooth and creamy.
  2. Add eggs one at a time, mixing just until incorporated.
  3. Mix in sour cream, heavy cream, and vanilla bean seeds until well combined.
  4. Pour the batter over the pre-baked crusts, filling each liner almost to the top.
  5. Bake for 18-20 minutes, or until the centers are set but still slightly jiggly.
  6. Allow to cool at room temperature, then refrigerate for at least 4 hours.

Step 3: Caramelize the Sugar Topping

  1. Before serving, sprinkle a thin, even layer of granulated sugar on each chilled cupcake.
  2. Using a kitchen torch, caramelize the sugar until golden and crisp.
  3. Let the topping harden for a few minutes, then serve and enjoy!

Notes

  • For Intense Vanilla Flavor: Use real vanilla bean for the best taste, but vanilla extract works as a substitute.
  • Prevent Overmixing: Mix ingredients just until combined to avoid air bubbles and cracking.
  • Chilling Is Key: Allow at least 4 hours (or overnight) for the best texture.
  • No Torch? No Problem! Use your oven’s broiler for 1-2 minutes, watching closely to avoid burning.
