  1. In a medium bowl, whisk together the almond milk, ground flaxseed, vanilla extract, cinnamon, nutmeg, and flour until smooth. Let the mixture sit for about 5 minutes to thicken slightly.
  2. Preheat a non-stick skillet or griddle over medium heat and add 1 tablespoon of coconut oil, allowing it to melt and coat the surface.
  3. Dip each slice of bread into the batter, ensuring both sides are well-coated but not overly soggy. Allow any excess batter to drip off.
