Description
A delicious and healthy Whole Wheat Cinnamon Crunch Banana Bread recipe that combines ripe bananas with whole wheat flour and a crunchy oat topping.
Ingredients
- 3 ripe bananas, mashed
- 1/3 cup melted coconut oil
- 1/2 cup brown sugar
- 1/4 cup honey
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 1/2 cups whole wheat flour
- 1/2 cup chopped walnuts (optional)
- 1/4 cup rolled oats
- 1 tablespoon sugar (for topping)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a large mixing bowl, combine the mashed bananas and melted coconut oil. Mix until well combined.
- Stir in the brown sugar, honey, eggs, and vanilla extract until smooth.
- Add the baking soda, salt, and ground cinnamon to the mixture, stirring until incorporated.
- Gradually add the whole wheat flour, mixing until just combined. If using, fold in the chopped walnuts.
- Pour the batter into the prepared loaf pan and smooth the top.
- In a small bowl, mix the rolled oats and tablespoon of sugar together, then sprinkle this mixture evenly over the top of the batter.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
Notes
- For added flavor, try mixing in 1/2 cup of dark chocolate chips or dried fruit like cranberries or raisins.
- If you prefer a sweeter bread, increase the brown sugar to 3/4 cup or add a bit more honey to taste.
