Ingredients

  • 3 ripe bananas, mashed
  • 1/3 cup melted coconut oil
  • 1/2 cup brown sugar
  • 1/4 cup honey
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 1/2 cups whole wheat flour
  • 1/2 cup chopped walnuts (optional)
  • 1/4 cup rolled oats
  • 1 tablespoon sugar (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a large mixing bowl, combine the mashed bananas and melted coconut oil. Mix until well combined.
  3. Stir in the brown sugar, honey, eggs, and vanilla extract until smooth.
  4. Add the baking soda, salt, and ground cinnamon to the mixture, stirring until incorporated.
  5. Gradually add the whole wheat flour, mixing until just combined. If using, fold in the chopped walnuts.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. In a small bowl, mix the rolled oats and tablespoon of sugar together, then sprinkle this mixture evenly over the top of the batter.
