Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup unsweetened cocoa powder
- 1/4 cup milk
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large bowl, cream the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.
- Beat in the egg and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Divide the dough in half. To one half, add the cocoa powder and milk, mixing until fully incorporated.
- Take a tablespoon of each dough (the plain and the chocolate) and roll them into balls. Place them on the prepared baking sheets, spacing them about 2 inches apart.
- Gently press down each ball to flatten slightly.
- Bake for 10-12 minutes, or until the edges are lightly golden. Let cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
Notes
- For a fun twist, try adding a teaspoon of almond extract for a different flavor profile.
- You can also drizzle melted white chocolate over the cooled cookies for an extra touch of sweetness and decoration.
