A flavorful marinade that infuses chicken with zesty Mexican flavors, perfect for grilling or cooking.
Ingredients
- 1/4 cup olive oil
 - 1/4 cup fresh lime juice
 - 2 tablespoons apple cider vinegar
 - 2 tablespoons honey
 - 3 cloves garlic, minced
 - 1 tablespoon ground cumin
 - 1 tablespoon chili powder
 - 1 teaspoon smoked paprika
 - 1 teaspoon dried oregano
 - 1 teaspoon salt
 - 1/2 teaspoon black pepper
 - 1/4 teaspoon cayenne pepper (optional for heat)
 - 1/4 cup fresh cilantro, chopped
 
Instructions
- In a medium bowl, whisk together the olive oil, lime juice, apple cider vinegar, and honey until well combined.
 - Add the minced garlic, ground cumin, chili powder, smoked paprika, oregano, salt, black pepper, and cayenne pepper (if using). Mix until all ingredients are thoroughly blended.
 - Stir in the chopped cilantro.
 - Place your chicken in a large resealable plastic bag or a shallow dish.
 - Pour the marinade over the chicken, ensuring it is well coated.
 - Seal the bag or cover the dish and refrigerate for at least 1 hour, or up to 8 hours for maximum flavor.
 - Preheat your grill or skillet over medium-high heat.
 - Remove the chicken from the marinade, allowing excess marinade to drip off.
 - Cook the chicken for 6-7 minutes per side, or until the internal temperature reaches 165°F.
 - Let the chicken rest for 5 minutes before slicing.
 
Notes
- For a smoky flavor, try adding a teaspoon of liquid smoke to the marinade.
 - If you prefer a citrus twist, substitute lemon juice for lime juice.
