Description

A flavorful marinade that infuses chicken with zesty Mexican flavors, perfect for grilling or cooking.

Ingredients

  • 1/4 cup olive oil
  • 1/4 cup fresh lime juice
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons honey
  • 3 cloves garlic, minced
  • 1 tablespoon ground cumin
  • 1 tablespoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional for heat)
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. In a medium bowl, whisk together the olive oil, lime juice, apple cider vinegar, and honey until well combined.
  2. Add the minced garlic, ground cumin, chili powder, smoked paprika, oregano, salt, black pepper, and cayenne pepper (if using). Mix until all ingredients are thoroughly blended.
  3. Stir in the chopped cilantro.
  4. Place your chicken in a large resealable plastic bag or a shallow dish.
  5. Pour the marinade over the chicken, ensuring it is well coated.
  6. Seal the bag or cover the dish and refrigerate for at least 1 hour, or up to 8 hours for maximum flavor.
  7. Preheat your grill or skillet over medium-high heat.
  8. Remove the chicken from the marinade, allowing excess marinade to drip off.
  9. Cook the chicken for 6-7 minutes per side, or until the internal temperature reaches 165°F.
  10. Let the chicken rest for 5 minutes before slicing.

Notes

  • For a smoky flavor, try adding a teaspoon of liquid smoke to the marinade.
  • If you prefer a citrus twist, substitute lemon juice for lime juice.
